Quick Burgundy Beef

Ingredients:

 1 flank steak (we used an amazing one from US Wellness Meats), sliced thin across the grain
 1 large red onion, sliced into thin rings
 Coconut oil

Sauce Ingredients:

 1/2 cup organic red wine
 2 TBSP coconut aminos
 1 TBSP olive oil
 2 cloves garlic, minced
 1/2 tsp dried basil
 Freshly ground pepper to taste
 Pinch of sea salt

Instructions:

  • Mix sauce ingredients in a medium bowl. Set aside.
  • In a large skillet, heat coconut oil over high heat. Saute onions until softened, browned and caramelized.
  • Meanwhile, heat additional coconut oil in another large skillet over medium high heat. Add steak strips. Sear steak on both sides, about 1-2 minutes per side.
  • Add sauce to steak pan, turn down heat to medium and simmer, uncovered, until meat is done but still pink and sauce has reduced a bit. About 2-3 minutes.
  • To serve, place steak strips on a plate, cover with caramelized onions and top with a little sauce.

Summer Shrimp

Ingredients:

• 1/4 cup lemon juice
• 1/3 cup extra virgin olive oil
• 1 tsp paprika
• 1/4 tsp pepper
• 2 tbsps chopped fresh basil
• 1/2 tsp salt
• 3 cloves garlic, sliced
• 1 tsp red pepper flakes
• 2 lbs shell-on deveined jumbo shrimp

Instructions:

• Heat the oil in a large skillet over high heat; cook and stir the garlic in the oil until translucent.
• Sprinkle the red pepper flakes and paprika into the oil.
• Add the shrimp and toss to coat.
• Pour the lemon juice over the shrimp; allow to cook until the shrimp are bright pink on the outside and the meat is no longer transparent in the center, 1 to 2 minutes more.
• Reduce heat to medium-low; add the basil and toss lightly.
• Season with salt and pepper to serve.

Crispy Chicken Strips

Ingredients:

• 1 cup egg beaters
• 1 tbsp garlic powder
• 1 tbsp pepper
• 2 tsps sea salt
• 3 breasts, bone and skin removed chicken breasts
• 1/4 cup ground almonds
• 4 tbsps ground flaxseed
• 1/4 cup oat bran cereal
• 1/2 cup wheat germ

Instructions:

• Pre-heat oven to 400 °F (200 °C). Spray cooking sheet with cooking spray.
• Cut chicken into small strips. Add egg beaters to a medium bowl and then add chicken to the egg beaters. Let chicken sit for 15 minutes.
• Add dry ingredients to a large Ziploc bag.
• Place chicken into Ziploc and shake. If need more coating add more wheat germ, flaxseed, and/or oat bran. You can also sprinkle a little extra wheat germ onto the chicken after you put it on the baking sheet for more coating if desired.
• Put the chicken on the baking sheet. Bake for 20 minutes or till chicken is done.

Spinach Pie

Ingredients:

• 1 cup fat free cottage cheese
• 3 large eggs
• 1/4 tsp pepper
• 1/2 tsp salt
• 2 cloves garlic
• 10 oz spinach
• 4 oz fat free cheddar cheese

Instructions:

• Thaw spinach.
• Mix all ingredients.
• Spray a pie pan with cooking spray, like Pam.
• Pour mixture into pie pan.
• Bake at 350 °F (175 °C) for 45-50 minutes.

• 5 large eggs
• 1 dash pepper
• 1 dash salt
• 1 cup frozen spinach, chopped, thawed & drained
• 1/4 cup chopped red bell pepper
• 1 lb lean ground beef
• 4 oz fat free cheddar cheese, shredded

Instructions:

• Preheat oven to 350 °F (175 °C).
• Coat bottom of an 8 x 11″ baking dish with olive oil spray. Set aside.
• Brown ground beef. Drain well.
• Add chopped red bell pepper and chopped spinach to ground beef and mix together.
• Pour ground beef mixture in to baking dish. Use a spatula or wooden spoon to evenly distribute the mixture.
• Sprinkle 1 cup (half a bag) of the shredded cheddar cheese over the mixture.
• In a separate bowl, scramble together 5 eggs. Add salt and pepper to taste. Pour eggs over beefmixture.
• Bake at 350 °F for 15-20 minutes. Remove from oven and let sit for 5 minutes before serving. Cut into slices or squares.

Curried Whole Cauliflower

Ingredients:

• 1 large head cauliflower

• 1/2 cup full-fat mayonnaise

• 2 tablespoons curry paste

Instructions:

• Remove leaves from cauliflower and trim the woody core. Place the entire head in a large, glass microwave-safe bowl.
• Combine the mayonnaise and curry paste in a small bowl. Spread the mixture evenly over the cauliflower.
• Cover the bowl with a microwave-safe plate. Cook on high until tender, 6 to 9 minutes. Let stand, covered, for 2 minutes more. Cut into 4 portions or break into bite-size pieces.

World Recipe Mexican Casserole

Ingredients:

• 1 1/2 pounds ground Beef, browned & drained
• 1 large Onion or
• 2 bunches green onions
• 1 can pinto beans — drained
• 1 can Ro-tel tomatoes
• 1 can cream of Chicken soup
• 10 corn tortillas — (up to 12)
• 1 pound Jack cheese|Monterey jack Cheese — grated
• 4 ounces Cheddar Cheese — grated

Instructions:

• n small bowl mix Cheddar Cheese and a handful of Jack cheese|Monterey jack Cheese for the top.
• Mix the rest of the Jack cheese|Monterey jack Cheese and the onions in a bowl. Mix beans and meat. Mix tomatoes and soup in a small bowl.
• Line a 13X9″ pan with tortillas. Layer the meat and Cheese and onions then finish with corn tortillas.
• Spread soup and tomatoes and top with cheeses.
• Cover with foil and bake at 375 degrees for 45 minutes. Let stand about 5 minutes before serving.

Basic Recipe for Beans

Ingredients:

• dry beans|fresh beans
• oil
• ½ onion
• ½ tsp black pepper
• ¼ to ½ diced small green bell pepper|green pepper
• 1 tbsp chili powder
• 2 tbsp tomato paste (optional)
• 2 tsp chicken broth granules

Instructions:

• Soak the beans over night, or bring water to a boil, turn off the stove and let the beans sit for an hour.
• Discard that soaking water and wash beans thoroughly.
• Heat pot, coat the bottom of the pan with a little oil, and refill with water (the oil helps to prevent sticking).
• In addition to onion, add ¼ to ½ diced small green bell pepper|green pepper.
• Add 1 tbsp chili powder (Gebhart’s, if possible).
• Optionally, add 2 tbsp tomato paste.
• Add 2 tsp chicken broth granules (all of this adds lots of flavor and body to the beans).
• Cook the beans until really soft.
• Turn off the fire, cover and lit stand for an hour.
• In the tropics, the beans will continue to cook!.
• Coat the bottom of an iron skillet or aluminum roaster with coconut oil.
• Add beans and cook until the mix begins to thicken.
• Smash up the beans with a potato masher, or a Cuisinart “Quick Prep” (This is really the only thing the Quick Prep is good for, but boy is it good for this!!) Add 1 can Salsa Casera, and continue to cook until the beans thicken to the right consistency

Crab-stuffed avocados

  • 100g white crabmeat
  • 1 tsp Dijon mustard
  • 2 tbsp olive oil
  • handful basil leaves, shredded with a few of the smaller leaves left whole, to serve
  • 1 red chilli, deseeded and chopped
  • 2 avocados

Instructions:

  • To make the crab mix, flake the crabmeat into a small bowl and mix in the mustard and oil, then season to taste.
  • Can be made the day ahead. Add the basil and chilli just before serving.
  • To serve, halve and stone the avocados.
  • Fill each cavity with a quarter of the crab mix, scatter with a few of the smaller basil leaves and eat with teaspoons.
